- 1 400g tin mixed beans, drained
- 1 185g tin tuna in brine, drained
- 1 chopped red pepper
- 1 slice chopped red onion
- 1 chopped tomato
Dressing:
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- 1 teaspoon dry or fresh herbs and seasoning.
Mix all ingredients together in a sealed plastic container and keep in the fridge until ready to eat. This is a lunch that will keep you feeling full for a long time. At only 230 calories you can serve this with a slice of wholemeal bread or 2 oatcakes.
